Q: What goes best with bacon? A: Maple syrup and crepes!

This morning my younger brother and I were deciding what to eat for breakfast. He is notoriously famous in our family for being ADDICTED to bacon, so bacon and eggs was always an option. My mum on the other hand, suggested something healthier, such as Weet-bix. However I felt like pancakes or crepes. Deliciously light and sickeningly sweet (just the way I like it :p).

We decided to make some crepes and, inspired by NQN’s bacon maple ice cream, I decided to top it all off with a little Australian bacon and some genuine Canadian maple syrup (purchased by yours truly during my exchange in Ottawa).

Here’s how I made the crepes:

Ingredients: 

  • 1 cup flour
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/2 Tsp vanilla essence
  • 1/4 Tsp cinnamon
  • 1/4 Tsp salt
  • 2 Tbsp melted butter
 Method:
  1. Mix the flour, cinnamon and salt together in a large bowl.
  2. Add eggs and whisk.
  3. Gradually add in the milk, vanilla essence and water, stirring to combine.
  4. Add the butter and mix until the mixture is smooth.
  5. Heat a frying pan over medium heat and pour in batter. Tilt the pan until the mixture covers the surface of the pan evenly.
  6. Cook the crepe for about 1-2 minutes until the bottom is golden. The flip and cook the other side.

We then fried up some bacon, and added it to the crepes, topping it off with a generous serving of maple syrup.

We even tried it with a little nutella- why not?!
